Organic Vegetable Stir-Fry with Tofu and Quinoa

Ingredients:
For the Stir-Fry:
- 1 tablespoon organic sesame oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cups organic broccoli florets
- 2 organic carrots, sliced
- 1 cup organic snap peas
- 1 block organic tofu or tempeh, cubed
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons organic tamari sauce
- 1 tablespoon organic rice vinegar
- 1 tablespoon organic maple syrup (optional)
- 1 tablespoon sesame seeds (optional, for garnish)
- 2 green onions, sliced (optional, for garnish)
For the Quinoa:
- 1 cup organic quinoa
- 2 cups water or vegetable broth
- 1 tablespoon organic olive oil
- 1/2 teaspoon sea salt
Instructions:
Preparing the Quinoa:
- Rinse the quinoa under cold water to remove any bitterness.
- In a medium saucepan, heat the olive oil over medium heat.
- Add the rinsed quinoa and stir to coat with oil.
- Pour in the water or vegetable broth and add the sea salt.
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is tender and the liquid is absorbed.
- Fluff the quinoa with a fork and set aside.
Making the Stir-Fry:
- In a large skillet or wok, heat the sesame oil over medium-high heat.
- Add the cubed tofu or tempeh and cook until golden brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
- Add the bell peppers, broccoli, carrots, and snap peas. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
- Return the tofu or tempeh to the skillet.
- In a small bowl, mix the tamari sauce, rice vinegar, and maple syrup (if using). Pour the sauce over the stir-fry and toss to coat all the ingredients evenly.
- Cook for an additional 2-3 minutes, allowing the flavors to meld together.
Serving:
- Divide the cooked quinoa among four plates or bowls.
- Top each serving with the vegetable stir-fry.
- Garnish with sesame seeds and sliced green onions if desired.
Tips:
- For extra flavor, marinate the tofu or tempeh in tamari sauce for at least 30 minutes before cooking.
- Feel free to add other organic vegetables like zucchini, mushrooms, or baby corn to the stir-fry.
- Adjust the tamari sauce to your taste preference for a more or less salty dish.
Organic Lavender Lemonade
Pair your healthy stir-fry with this refreshing organic lavender lemonade!
Ingredients:
- 4 cups filtered water
- 1/4 cup dried organic lavender buds
- 1 cup freshly squeezed organic lemon juice (about 4-6 lemons)
- 1/2 cup organic honey or maple syrup (adjust to taste)
- Ice cubes
- Lemon slices and lavender sprigs for garnish
Instructions:
- In a medium saucepan, bring 2 cups of water to a boil.
- Remove from heat and add the dried lavender buds. Let steep for about 10 minutes.
- Strain the lavender-infused water into a pitcher, discarding the lavender buds.
- Add the remaining 2 cups of water, lemon juice, and honey or maple syrup to the pitcher. Stir well until the sweetener is fully dissolved.
- Chill the lemonade in the refrigerator for at least 1 hour.
- Serve over ice, garnished with lemon slices and lavender sprigs.
